Figure it takes 20-22 minutes for a single game on the telecast.
If you have a best of 7 that gets to 3-3, editing those six games to fit into the remaining 15 to 18 minutes of a one hour telecast (figuring time needed for commercial breaks, interviews, intros, trophy presentation)- that would be rushed and really bad TV.
I would assume that cost would be a factor as well with the editing - additional post-production won't happen for free.
I'm sure with the relationship the NCAA and ESPN have with their contract for covering many different championships, that helps leverage the full coverage for the "live" NCAA finals. The times the NCAA finals were repeated, there were edits to fit within a two hour timeslot.
USBC doesn't have the same commercial leverage - or probably funding - for 4 two hour shows for the ITC/ISC shows.
